• 200g dark chocolate broken into chunks
  • 100g milk chocolate broken into chunks
  • 250g salted butter
  • 400g soft light brown sugar
  • 4 large eggs
  • 140g plain flour
  • 50g cocoa powder
  • 24g freeze dried Cherries


1. Heat oven to 180C/160C fan/gas 4.

2. Line a 20x30cm baking tray tin with baking parchment.

3. Put the chocolate, butter & sugar in a pan and gently melt - stirring occasionally with a wooden spoon.

4. Remove from the heat.

5. Crack eggs in a bowl and stir into the melted chocolate mixture.

6. Sieve over the flour and cocoa and stir in.

7. Next stir in all of the freeze dried cherries and scrape into the baking tray.

8. Bake on the middle shelf of your oven for 30mins (or for a firmer texture cook for 5 mins more).

9. Let the brownies cool before slicing into squares. Store in an airtight container for up to 3 days.

Serving Suggestion – Place on a nice white dish and dust with icing sugar accompanied with a scoop of vanilla ice cream.
