EASTER HOT CROSS COOKIES

Ingredients

200g Softened butter

100g light muscavado sugar

1 egg

250g plain flour

1 tsp cinnamon

200g chocolate chips

50g freeze dried blueberries

Coloured icing tubes

 

Method

  • Preheat the oven to 180C/Gas 4.
  • Layer the baking trays with parchment paper
  • In a large bowl mix all of the ingredients together and combine to make a dough
  • Roll the lumps of dough into balls and press down.
  • Use your chosen cookie cutter or just hand form into your preferred shapes
  • Space your cookies out on a baking tray so they have room to expand
  • Bake for 10 minutes until golden
  • Remove cookies from the trays and cool on a wire rack
  • Using your chosen icing tubes decorate as you wish
