Fudgy Apple Brownies
Ingredients
For the brownies -
- 3 sweet potatoes, peeled, chopped and cooked
- 100g dates, soaked in boiling water for 10 minutes
- 6 tablespoons maple syrup
- 2 tablespoons coconut oil, melted
- 4 tablespoons almond butter
- 6 tablespoons cacao or cocoa powder
- 100g ground almonds
- 100g oat flour
- 3 tablespoons Lio Licious Apple Powder
- 1 teaspoon cinnamon
- 1 apple, diced
- 3 tablespoons almond butter
- 1 tablespoon coconut oil, melted
- 4 tablespoons maple syrup
- 4 tablespoons cacao or cocoa powder
- 30g pistachios shelled
- 3 tablespoons Lio Licious Apple Powder
Method
Get making!
- Preheat the oven to 180 degrees C. Grease and line a 9x9in baking tin.
- Place ⅔ of the cooked sweet potato chunks, drained dates, maple syrup, melted coconut oil, almond butter and cacao or cocoa powder in a blender and whizz up well until smooth.
- Add in the ground almonds, oat flour, apple powder and cinnamon and whizz up again until you have a slightly thick batter. Stir in the diced apples.
- Spread the mixture out into the tin and bake for 20-25 minutes until firmed. Leave to cool in the tin.
- Add the remaining cooked sweet potato to a blender along with the coconut oil, maple syrup and cacao or cocoa powder for the topping - blend until thick and smooth. Chill in the fridge until needed.
- Once the brownie has cooled, spread the topping over to cover then cut into 9 - 12 pieces. Blitz the pistachios and apple powder in a blender to form a fine crumb then sprinkle over. Enjoy!
