50g Melted Butter

50g Plain flour

¼ tsp baking powder

1 tsp mixed spice

50g Dark Muscovado sugar

1 egg

Finely grated zest of 1 orange

Handful of freeze dried blueberries, raspberries and cherries



  1. Grease and flour 4 small ramekins or 2 medium sized ones
  2. Tip all the ingredients except the berries into a large bowl and mix until completely combined
  3. Stir in the dried fruit
  4. Chill the cake mix until needed
  5. Heat the oven to 230c/fan 210/gas 8
  6. Divide the mixture between the ramekins and bake for 15 – 20 minutes until puffed up and golden


Serving Suggestion – Warm topped with ice cream or cream
